This little delight was a surprise discovery (aren’t they all?). The Liquidambar has a hyper-washed coffee profile and yet…it’s not processed that way. This is a honey processed coffee. Sweet.

All we ever buy (the loyal will know this) are washed coffees. We love the consistency and the clean, classic, snappy profile that never goes out of style. Washed coffee is the quintessence of a classic cup. Sure there is new stuff buuuut..nice to date, hard to live with.

A “yellow honey processed” coffee is just a slight pivot from our usual. To note, there are also red and black honey processed coffees by the way; each a step further, and orders of magnitude riskier, than our washed coffee profile preference.

Honey processed coffee pulps the coffee and then dries it with the mucilage still intact adding a certain “je ne sais quoi” to the cup.

The process here super-charges things for an exceptionally structured cup that electrifies the palate. As such, we couldn’t resist presenting one coffee, two ways:

• a Medium Roast: a more balanced, approachable presentation with tempered acidity and consistent with everything we’ve ever done.
• a Light Roast: a very “au courant” presentation to showcase the acidity in as flattering, untamed and hi-fi experience as possible.
